Is Japchae Spicy? Can It Be Vegetarian?

고독한 여행가Admin· 7 viewsWritten in Korean

Curious about japchae, but wondering whether it will be spicy because it is Korean food? A typical version combines glass noodles and vegetables with a soy-sauce-based seasoning, rather than relying on a spicy gochujang sauce. It may still contain meat or egg, so being mild and being vegetarian are two different things. The translucent noodles in the photograph are dangmyeon, or glass noodles. Modern japchae uses noodles made from starch, such as sweet potato starch. Unlike rice noodles, they have a different base ingredient and become soft and springy when cooked. Vegetables such as carrots and spinach, along with mushrooms, can vary by recipe. The flavor usually combines savory soy sauce, sweetness, and the nutty aroma of sesame oil. If you do not handle spicy food well, ask whether this particular japchae is spicy. Chili, pepper, and additional seasonings can change its flavor, so do not assume every restaurant's version is equally mild. Can you eat it as a vegetarian? It can be made mainly with vegetables and mushrooms, but restaurant versions may include beef or an egg garnish. If you are vegan, check the eggs and seasoning ingredients as well as the meat. Ask whether it contains meat or egg, and whether it can be prepared without them. Visible vegetables alone do not tell you everything. What is the difference between japchae and japchae deopbap? Japchae deopbap is japchae served over rice. Notice the menu name depending on whether you want just the noodle dish or a meal with rice. Even if rice is not shown in a photograph, check the menu description or ask the staff what your order includes. If ordering is difficult, show these Korean questions on your phone: ‘잡채가 있나요?’ (Do you have japchae?), ‘맵지 않게 가능한가요?’ (Can it be made non-spicy?), and ‘고기와 달걀을 빼고 만들 수 있나요?’ (Can you make it without meat and egg?). Whether the kitchen can accommodate your request depends on the restaurant. Naming the ingredients you cannot eat is clearer than only saying that you are vegetarian. Checking the spice level, ingredients, and whether rice is included can make an unfamiliar menu easier to navigate. Which dish has confused you most when ordering in a Korean restaurant? Leave its name or your question in the comments, and we can explore it in a future Korean food story. 💜 Photo description: An actual photograph of japchae in a white bowl, with translucent glass noodles, carrots, leafy greens, mushrooms, and bell peppers.
